Random Encounters are the main way of getting experience and money (if you have this option enabled in difficulty settings) in ECHH. They are fights which pop up without warning. This feature is loved and hated, depending on the player.
There is no in-game setting, which will manage the rate of random encounters, so there is no easy way to adjust that (at least for now). However, there are charms, which can increase or decrease their frequency.
If you don’t want to fight, you can always try to escape from an encounter. However, keep in mind that if opponents are close to your level, this action may fail. In this scenario, you will miss a turn, and your enemies will get a free attack.

As of now, first players who are able to play the title thanks to Deluxe Edition, report a peculiar problem with random encounters. It seems that their frequency is connected to your framerate. To experience fights properly, try to cap frames at 60 FPS (on your device, not in-game). Of course, this is a problem which can be encountered before the official release. We may assume that developers will release a patch on launch, which will fix some pre-release issues.
